Guide to wheat flour alternatives - Embers on the hearth

I have written why I think flour is one of the basic ingredients everyone should keep at home to maximise their cooking potential. There are so many things you can do just by having a few spoonfuls of flour available.

Luckily, regular wheat flour is not the option out there. There are many options for flour available right now, and as they become more and more popular prices keep getting more affordable. This post is a roundup of fantastic recipes from around the web that feature 12 flours that even if they are if a little harder to use and find, are well worth the effort!

Oat flour

Oat flour can still be quite tricky to find in regular stores, and when you do find it, it’s usually expensive. Luckily, oat flour is extremely easy to make at home! You don’t need to pay high prices for it. All you need is some oats and either a blender or food processor.

Most recipes that use oat flour combine it with some other kind of flour (usually wheat). however, all the recipes listed here use oat flour only.

Coconut flour

A lot of the recipes that use coconut flour come from ‘healthy’ or ‘natural’ cooks and include a lot of alternative ingredients. Most (if not all) of these recipes will work with more conventional and affordable ingredients if you don’t have the required ones around.

When using coconut flour you need to keep in mind that it likes to soak on liquid and it can be quite tricky to adapt recipes made for wheat flour. It’s always best to start with a recipe developed for coconut flour and modify that.

If coconut flour is hard to find or too expensive, you can use coconut flakes or shreds to make your own, it won’t be exactly the same, but close enough.

Rice flour

As Asian cuisines become more and more popular, rice flour becomes easier to find. If you struggle finding rice flour or it’s expensive at your local supermarket, check in Asian stores. Usually they will have a variety to choose from at affordable prices. Or, you can make your own by blending or processing rice.

All these recipes use rice flour only. Some use white rice flour, some brown rice flour, and some both. But none calls for any other kind. However, a good third of the recipes need xanthan gum. It’s not too hard to find in the baking section of supermarkets, and it greatly improves the texture of baked goods.

Rye flour

Rye flour makes us think of Scandinavian and Northern European recipes, and I have listed many of them here. However, there are also a lot of opportunities for using rye flour in recipes from all over the world.

Because of how heavy it is, rye flour is usually mixed with other flours and finding recipes that use rye flour only is extremely hard, but not impossible! I added a note to those recipes listed that use rye flour only (about half of the recipes).

Spelt flour

Spelt is a kind of wheat. And as such, doesn’t generally require any adjustments if you want to replace regular wheat flour. The flavour is a bit nuttier, and somewhat similar to wholemeal flour.

If you’re gluten-free, you should avoid cooking with spelt, and be careful because sometimes it can also be called farro.

Buckwheat flour

Contrary to what the name suggests, buckwheat has nothing to do with wheat. Buckwheat is, in fact, a seed and 100% gluten-free. Buckwheat flour is usually combined with wheat flour (which makes the final recipe have gluten!), but all the recipes listed here use buckwheat flour only.

Buckwheat flour can be hard to find, but it can easily be made from the seeds, which can usually be found in larger supermarkets and health stores. All you need to do is grind them using a food processor or blender.

Chickpea flour

Garbanzo bean flour, besan flour, gram flour… chickpea flour comes by many names depending where you buy it from, but it is all the same thing: raw chickpeas ground into a fine powder.

If you’ve never used before, it is an easy way to try new cuisines, a great vegan egg replacement, and very affordable. Just make sure you get it from international food stores or the international section at the supermarket. Getting it from the baking section means you will pay a ridiculous price for it!

Almond flour

Almond flour is only usually used by those who want to make macarons and those on a gluten-free diet. But almond flour is surprisingly versatile, and can be used for a large variety of recipes.

Be careful when buying almond flour and don’t confuse it with almond meal. Flour is thinner (and usually blanched), while meal is coarser (and usually unblanched). Using the wrong one can completely mess up a recipe!

Cornmeal

Cornmeal (or polenta or corn grits depending where you’re from) comes in a variety of ways. It could be super fine (similar to wheat flour), fine, coarse, or extra coarse (similar to semolina, and sometimes also called ‘stone-ground’). Which one you use depends on the recipe you are following, but when in doubt, coarse is usually considered the standard.

Just make sure you don’t confuse cornmeal with corn flour (or cornstarch), that is something completely different! Cornmeal can be yellow, white or blue; while corn flour is always white and very, very fine (much like powdered sugar).

There is also masa flour (‘masa’ means dough in Spanish) which is used in Mexican cooking, most often to make corn tortillas. This flour is different to both cornmeal and corn flour. Corn for masa flour is first boiled in an alkaline solution, then dried, and then ground into flour.

Cornmeal can also be bought as ‘instant’, or ‘steamed’, or ‘pre-cooked’. All of these words mean the same: the cornmeal has been pre-cooked and the cooking time will be a lot shorter than with regular cornmeal.

Teff flour

Most people will probably have never heard of teff. It is a very small seed, mostly used in Ethiopian cuisine. Some people may have experienced it when eating injera, but not realised it was made from teff.

The flavour is quite nutty and, as it’s quite obvious by the recipes below, it goes great with chocolate and all sorts of nuts and seeds. It can also be used in porridge, and all the toppings used with oats can be used with teff too.

Sorghum flour

Jowar flour or sorghum flour is most often used in African and Asian cuisines. Elsewhere, sorghum is generally used as animal feed, which is such a pity because sorghum is absolutely delicious!

Sorghum flour is one of the hardest to find for those in Europe and America. You can usually find it in health food shops, Asian stores (Indian ones mostly), or the international section of larger supermarkets (or very occasionally in the baking section), and when all else fails: online.

Quinoa flour

A few years ago only people from a small area of the world knew what quinoa was. Now, we can even find it in discount supermarkets, right next to cheap bags of rice!

And with that growing popularity, came a plethora of products based on quinoa. Flour is just one of them. If you can’t find quinoa flour, it is easy to make at home with just a blender or very powerful food processor.
